Mondays will be the day that I post new menus for you!
Menu planning is a tad..... well..... let's just be honest..... STRESSFUL. Especially if you are doing it on a STRICT BUDGET! With that said, I have started planning out my meals for a couple weeks at a time. I am doing my best to make the meals as healthy as possible and have had a lot of luck so far!!! We feed a family of at least 5 every night and then we have 6 here a few nights a month as well so planning really helps me out as the mama!
I am going to do my very best to post the links to my list to my best of my ability. I also have a specific board on my Pinterest dedicated to my current menu.
This past week and upcoming plans:
{if the item is not a link it means I just made it from a basic recipe I probably just had lying around... if it is super great I will post it seperate in a blog post}
- Marinated Meatballs with Thin Whole Wheat Pasta drizzled in Olive Oil, Garlic, Mozzerella Pearls and Sliced Tomatoes.
- My Mama's Lasagna!
- Creamy Chicken Enchiladas (I like to use the large can of diced Green chilis and maybe even add some cilantro or salsa to it.)
- My "Throw Whatever I have in my cabinets" Meatloaf w/Awesome Potatoes with Seasoned Salt and Cajun Seasoning
- Creamy Chicken and Rice I added a can of drained rotell as well to this YUM
- Grilled Cheese night! (I like to use Sprouted Wheat Bread because it digests as a VEGGIE!!!)
- Teriyaki Pork Loin with Roasted Potatoes for the family and I had Sweet Potato Fries
- Healthier Sloppy Joes (again you can get Sprouted Wheat Buns instead of bread or just use the bread!)
- Spaghetti Night!!! (GUESS WHAT! you can even buy Sprouted Wheat Pasta or use Spaghetti Squash for the noodles, or use a Gluten Free Pasta like we do)
- Pizza Night (nothing healthy about this. lol)
- Baked Chicken Legs with your choice of side
- Easiest Crockpot Chicken I used this recipe exactly (which i love the black beans) THEN I made some Easy Mexican Rice and got some Spinach Wraps, Jalapeno Cheddar Wraps & White Flour Tortillas and made BURRITOS!!! yum!!! I added a Super Green salad mix to mine as well with some fresh salsa. It was AWESOME!
- Island Chicken I made all the breasts I had planned for this meal but I just used 1 of them for dinner that night for the kids with some pasta and veggies then I sliced up the rest and put it aside for the Southwestern Chopped Chicken Salad that is found in my previous blog.
- Pulled Buffalo Chicken You can eat it on buns or wraps or on a potato or salad.... the options are endless! Get Creative!

mmm i fixed this the regular way several months ago looking forward to fixing it again this way :)
